MEXICAN CHICKEN & RICE CASSEROLE

INGREDIENTS

  • 1 15-oz can black beans, drained and rinsed

  • 1 14.5 oz can diced tomatoes, drained

  • 1 c. pasta sauce can be flavored with garlic and onion etc.

  • ¼ c. salsa

  • 2 cups cooked rice

  • 2 c. cooked chicken diced

  • 1 cup sour cream

  • 1 ½ cups shredded cheddar cheese divided

  • ¼ to ½ tsp. chili powder

  • ½ tsp salt

INSTRUCTIONS

  1. In a large bowl, combine all ingredients, except ½ cup shredded cheese.

  2. Pour into a greased 9×13 baking dish and bake at 350°, uncovered, for 20-30 minutes, until heated through.

  3. Remove from oven and add the ½ cup shredded cheese. Return to oven until cheese is melted, about 3-5 minutes.
